Cucumbers
What is it?
We grow several varieties of cucumber including Corinto, Diva, Unagi, and General Lee. Slicing cucumbers can be used for pickles just like pickling cucumbers! To find them, you will need to use your hands to gently part the leaves - the cucumbers will be laying on top of the row, under the leaves, so you may not be able to see them at first. Look for cucumbers that are about 8 inches long. Find where the cucumber meets the main stem of the plant, and carefully snip the stem with scissors.
Cucumbers are extremely hydrating, which we all need during a Texas summer! They’re also full of fiber and vitamin K, which helps keep your bones healthy and strong.
How do I clean and store it?
Just rinse your cukes in cool water, let them dry, and they’re good to go! Store them in a reusable silicone bag in the fridge.
How do I cook it?
Slice cucumber with some cherry tomatoes and onion for a Texan side salad
